Properties: white to milky crystalline particles, odorless, slightly bitter. Insoluble in water, slightly soluble in cottonseed oil, peanut oil, pork fat. Gallate propyl ester is more stable, when copper, iron and other metal ions occur color reaction, into purple or dark green.

Main uses: as antioxidant in fat, greasy food and medicine preparation. It is an oil-soluble antioxidant that is allowed to be used in China and widely used abroad. It has stronger antioxidant capacity to lard than BHA or BHT, and its antioxidant effect will be enhanced when mixed with BHA and BHT.
