Yeast is an important food and industrial microbe, which has a large amount of β-1,3/1, 6-glucan in its cell wall. Yeast β-glucan is odorless, insoluble in water, ethanol, acetone and other organic solvents. It has the functions of enhancing animal immunity, anti-tumor, anti-infection, anti-virus, lowering cholesterol, and promoting wound healing. It can be added to dairy products, energy drinks, baked products, candy and other foods. Ministry of Health Announcement No. 6 of 2012 has extended the use of yeast beta-glucan to larger infant formula milk powders.

Function of yeast beta-glucan
Enhance immunity
Yeast beta-glucans taken orally are different from other food components in that they are not hydrolyzed by acids or enzymes in the stomach and intestines but pass directly through the small intestine. Macrophages on mucous cells in the small intestine absorb beta-glucan via beta-glucan receptors and immediately activate these cells. Beta-1, 3-D-glucan works by stimulating macrophages [3], a type of white blood cell capable of playing a broad role in protecting and boosting the immune system, protecting the body from possible health hazards. Macrophages are a major class of cells involved in non-specific immunity. It eats foreign particles and destroys them. Macrophages also signal other immune cells, such as B cells and T cells, to move to the site of infection. It also produces growth factors to repair damaged tissue.

Anti infection, improve disease resistance
Scientific studies have shown that [4] yeast β-glucan can significantly increase the effectiveness of antibiotics. When used in combination with antibiotics, its effect of stimulating macrophages can increase the therapeutic effect of the drug. In the β-1, 3-D-glucan enhance the body’s own and anti-bacterial ability at the same time, antibiotics can inhibit the invasion of bacteria, improve the body’s disease resistance. In rats with peritonitis, β-1, 3-D-glucan alone had an 80% survival rate (compared with 20% in the control group), antibiotics alone had a 65% survival rate, and the combination had a 10match0% survival rate.

Reduce blood fat
β-1, 3-D-glucan can absorb bile acid and promote bile acid excretion, promote the transformation of cholesterol into bile acid, and maintain the inherent normal metabolism of cholesterol. Nicolosi[5] et al. studied 15 obese men with high cholesterol. Patients in the study who maintained the same body weight were able to significantly lower their total blood cholesterol by 8 percent at week 7 and another 6 percent at week 8 on top of week 7.
