α-cyclodextrin is a dextrin consisting of 6 glucose units connected by α-1.4 sugar bond into a ring structure. It is the product of glucosyltransferase acting on starch syrup. Because the size of α-cyclodextrin is smaller than that of β-cyclodextrin, α-cyclodextrin is more suitable for encapsulation of small molecular weight, which makes it more stable. The solubility of α-cyclodextrin in water is 14.5 g/100 mL at 25°C, so it is suitable for applications where high solubility of cyclodextrin is required.

The role in the food sector
In the food industry, alpha-cyclodextrin (also known as alpha-dextrin) can provide a new purely plant-based alternative to stabilized oil-in-water emulsions. In addition, it can enhance the wet foaming and dry foaming effects of egg whites, and when used as a foaming agent, can produce new mousse desserts with no fat or milk proteins at all. Alpha cyclodextrin has been approved for use as soluble dietary fibre in Europe, the United States and many other countries, and the European Commission has confirmed its proven health benefits. EU evaluators have confirmed that eating a starchy diet containing alpha-cyclodextrin can reduce the rise in blood sugar after a meal. Cyclodextrins have other uses in the food industry, such as masking bitter taste, stabilizing aroma and improving the bioavailability of active ingredients.
